Thirsty Monk Brewery Pairs Up with Tight Tacos in Hawthorne After Popular Food Truck Forced to Vacate Growler’s Taproom
Thirsty Monk will be closed February 8 - 28 as they welcome new foot partner Tight Tacos into their space. Thirsty Monk will reopen on February 29 with Thirsty Monk taps only, craft cocktails and of course, delicious tacos from Tight Tacos.
PORTLAND, OR— Thirsty Monk, brewer of Belgian-Rooted Modern Ales and operator of world-recognized craft beer bars, announced today it will welcome their friends at Tight Tacos Food Truck into the kitchen at their Hawthorne Street location after a landlord dispute led to the closing of Growler’s Taproom last week, leaving the street taco purveyor without a space.
“We’ve been searching for just the right food partner to share their passions with our Thirsty Monk Brewery patrons for a few months now,” says Barry Bialik, Thirsty Monk CEO. “When we heard about Tight Tacos possibly needing a new home, we reached out right away. Mark and I were able to put our entrepreneurial energies and synergies together and get to a 1am handshake emoji in just a matter of days. I’m so excited to help a neighbor business and be able to offer our patrons delicious tacos, while allowing us to focus our passions on what we are best at— beers and cocktails,” says Bialik.
Thirsty Monk will be closed February 8 - 28 so that Tight Tacos can move into their kitchen. To accommodate the new food partnership, Thirsty Monk will shed a few more remnants of its former European soccer bar vibe and incorporate elements of the Tight Tacos branding. The brewery taproom will reopen with Thirsty Monk taps only, craft cocktails and of course, delicious tacos from Tight Tacos.
“Since we started Tight Tacos in 2016, our goal has always been to use our food as a means of bringing people together to have a good time. And what better way to do that than with beer and tacos?” says Mark Cosio, owner at Tight Tacos .“The Tight Tacos team is extremely excited to be partnering with Thirsty Monk.” In addition to their new location at Thirsty Monk, Tight Tacos also has a brick and mortar shop at The Zipper.
Thirsty Monk has proudly served Portland’s Hawthorne neighborhood since its opening in summer 2018 on the corner of 32nd and Hawthorne Streets. Prior to the brewery closing for renovations with Tight Tacos, Thirsty Monk will offer special deals on coveted Belgian bottles.

Thirsty Monk Takes Home First GABF Medal In Company History For Denver-Brewed Abby Blonde Ale
This is the brewery’s first GABF award and Abby Blonde’s second medal this year.
DENVER, CO— Thirsty Monk, brewer of Belgian-Rooted Modern Ales and operator of world-recognized craft beer and craft cocktail bars, was awarded a bronze medal for its Denver-brewed flagship Abby Blonde Ale in the Belgian and French-Style Ale category at the largest Great American Beer Festival® yet. This is the brewery’s first GABF award and Abby Blonde’s second medal this year.
Named after the brewery owner’s youngest child, Abby Blonde is a classic Belgian Style made with Franco-Belges Pilsner malt, wheat, and traditional sugar. Weighing in at 7.3% ABV, this slightly hazy, golden brew was fermented with Thirsty Monk’s in-house Belgian yeast strain, offering a plethora of flavors including banana and light clove.
When asked about how she felt about the win, young Abby announced that “It’s really hard to be famous. And Abby Blonde won a medal and Brother Noah didn’t.” Brother Noah is Thirsty Monk’s Belgian Chocolate Stout, named after Abby’s brother Noah. “I’ve got a unique form of sibling rivalry at my home,” says Barry Bialik, Thirsty Monk CEO. “Abby Blonde is one of our best selling beers and has medaled twice in the past year, but Brother Noah has higher Untappd reviews. And both kids know where their beers stand.”
“I am so proud of Brian, Norm, and Chris, our lead brewing team, and the entire Monk staff for their constant representation of our beers to our patrons. We are so honored to be recognized for our Abby Blonde this year,” continues Bialik.

Thirsty Monk Taps Trail Monk Fall IPA; First Beer of New Karma Series
Trail Monk will have September debut dates in Asheville, Denver and Portland, and will be featured in various Karma Series fundraising events at Thirsty Monk Brewery taprooms throughout the season.
Thirsty Monk, brewer of Belgian-Rooted Modern Ales and operator of world-recognized craft beer and craft cocktail bars, is proud to present a galvanized beer program to support nonprofit efforts that align with its company values with its new Karma Series— featuring a unique beer brewed each quarter with a different charitable focus.
To kick it off, Thirsty Monk introduces Trail Monk Fall IPA, a maple IPA and the first of the Karma Series, made to support the Blue Ridge Parkway Foundation in Asheville, the 14ers Initiative in Denver, and Trailkeepers of Oregon in Portland. It will debut at Thirsty Monk Denver during Denver Beer Fest on Friday, September 14, at Thirsty Monk Biltmore Park in Asheville on Thursday, September 27 during the Blue Ridge Parkway Foundation’s Find Your Pint event, and a date yet to be determined at the Thirsty Monk Portland.
Trail Monk is brewed with Pilsner malt, red wheat, oats, and roasted chestnuts to create a hazy, burnt-orange color reminiscent of fall leaves. Cascade, EKG, Lemondrop and Hersbrucker hops create a unique and refreshing aroma of citrus, spice, and earth that’s fermented with Thirsty Monk’s house Belgian yeast adding baking spice and banana peel flavors. Maple syrup was added after fermentation to round out the aroma and provide a touch of maple sweetness to balance its bitterness and roasted chestnut finish.
A portion of each Trail Monk full pour sold in Thirsty Monk taprooms will be donated to the Blue Ridge Parkway Foundation, the Colorado Fourteeners Initiative and Trailkeepers of Oregon in Asheville, Denver, and Portland respectively.
“The K in Monk actually stands for Karma,” says Barry Bialik, Thirsty Monk CEO. “Thirsty Monk has been very successful with some of our organized fundraising campaigns in Asheville and we wanted to use our experience toward helping each of our cities in the best way our brewery can. What better way for a brewery to help raise money than to brew a beer? We look at the common needs our cities have and will feature a different beer and a different charitable cause each quarter, starting with our Fall beer and a focus on outdoor trails.”
Trail Monk will have September debut dates in Asheville, Denver and Portland, and will be featured in various Karma Series fundraising events at Thirsty Monk Brewery taprooms throughout the season. Find details at monkpub.com/events.
The Karma Series is a quarterly connection to charities in Thirsty Monk’s markets that support causes the brewery feels most passionate about. Upcoming beers in the Karma Series will benefit affordable housing in the winter, LGBTQ awareness in the spring, and children’s needs in the summer.

Bialik designed the original Thirsty Monk Belgian Bar in downtown Asheville based on his favorite Northwest pubs from his years spent living in Seattle and Anchorage, Alaska, and his wife moved to Asheville after 17 years in Portland. “Some of our nearest and dearest friends live here, and my brother and his family moved here to manage the Thirsty Monk,” continues Bialik.
Thirsty Monk’s Head Brewer Brian Grace, who is based in Denver, recently visited Portland to brew the company’s first Oregon-brewed recipe with well-respected Portland brewer Carston Haney. PORTLAND, OR— Bazi Bierbrasserie (1522 SE 32 nd Ave – Hawthorne District), Portland’s premiere Belgian and European beer bar announced today its plan to join the Thirsty Monk, Inc. family of breweries and pubs.
“It is with much delight that I announce Bazi Bierbrasserie will be joining the Thirsty Monk family, an organization that shares the same passion for Belgian beer and values a sense of community” says Bazi Owner Hilda Stevens. “This provides an opportunity for my employees’ growth aspirations in the service industry while also aligning with an institution that embraces crafting exceptional Belgian-inspired beers and providing a superior customer experience."
Over the past six years, Bazi Bierbrasserie has become a Belgo aficionado oasis, quickly receiving recognition in hop-centric Portland and at the national level. Bazi Bierbrasserie was named “Top 100 Beer Bars in America” by DRAFT Magazine for three consecutive years, “Top Beer Bars in Portland” by the Oregonian and Thrillist, “Portland No. 1 Soccer Pub” by the Oregonian, and “SE Portland Best Happy Hours” by Willamette Week.
"Bazi and Thirsty Monk have been on such similar paths since inception, with the experiences we offer patrons and seats on the same “Top 100 Beer Bars” lists," says Thirsty Monk CEO Barry Bialik. "Hilda’s values, attention to detail, and compassion towards her employees resonates strong at Bazi, and those are all shared values of Thirsty Monk that make this additional of them to our family feel even more natural."
Stevens will stay on staff at the Portland Thirsty Monk to help though the transition to ensure clientele continues to receive the same level of customer service they've come to expect at Bazi. "I’ve lived in Portland for 20 years and I’ll always be grateful for the opportunity to grow a business in such a welcoming community, but after Hurricane Harvey my priorities have changed personally. My intention is to eventually head south to be closer to my siblings and parents in Houston," she says.
Bazi will officially become part of the Thirsty Monk family in mid-December, and the space will take on the Thirsty Monk name in early 2018. Plans include adding a small batch brewhouse in Portland.
Thirsty Monk is also expanding to Denver, Colorado. Read that press release here.

Brian Grace began his brewing career with Moylan’s in California before heading to Jolly Pumpkin in Michigan and then Crooked Stave in Denver. “We are so excited to have Brian join our Monk family, not just because he’s a well-respected Head Brewer, but also, he’s a creative and kind person. Good people make better beer,” says Bialik.

Thirsty Monk also plans to install a small batch brewhouse in its Portland location, and serve a selection of guest taps while brewing operations get going.
“We’re expanding Thirsty Monk in a whole new way, linking a network of localized brewing hubs. Smart growth, craft-style. No need to sell the soul to expand. Our soul, creative spirit and community roots are what we and our beers are all about,” adds Bialik.
