Peach Street Distillers to Release Colorado’s First 10-Year Bourbon

The Palisade-based small batch distillery is proud to add Colorado Straight Bourbon 10 Year Single Barrel in their stellar whiskey program.

PALISADE, CO— Peach Street Distillers is making Colorado history. For the first time ever, the state’s oldest independently owned distillery will release Colorado Straight Bourbon 10 Year Single Barrel, a bourbon that has been quietly resting in a dark corner in Peach Street’s rickhouse since October 2009. Notably, this magic was occurring during a time when distilling was much less popular of an endeavor in the Centennial state.

“Traditionally, longer aged Bourbon Whiskeys are from Kentucky where the humidity and daily shifts in temperature are not so extreme,” says Dustin LeMoine, Bourbon Lobbyist and Director of Sales at Peach Street Distillers. “Our little rickhouse in the Colorado desert sees very dry conditions and temperature swings of up to 40+ degrees per day. This combination draws the bourbon deep into the oak and keeps the spirit in the barrel active—further developing the flavor.”

Peach Street’s Colorado Straight Bourbon is made from sweet Western Colorado corn grown two miles down the road, pure Rocky Mountain water, and rye and barley from Proximity Malt in the San Luis Valley, our 10 Year Expression was aged in American Oak for ten years and bottled from a single barrel. “The result is a bouquet of flavors including cherry, cinnamon, hay, pipe tobacco, caramel and a heavy dose of leather and vanilla on the nose”, according to Head Distiller, Davy Lindig. Peach Street Distillers is proudly local which is why all phases of production— brewing, fermenting, distilling and aging— were done in Palisade, Colorado.

The 10-Year Colorado Straight Bourbon will join Peach Street’s award-winning lineup of Bourbon and Whiskey expressions including Colorado Straight Bourbon, 5 Year Single Barrel Colorado Straight Bourbon, Barrel Strength Colorado Straight Bourbon, Modus Hoperandi Hop Whiskey, American Peated Single Malt Whiskey and Smoked Rye Whiskey. 

Peach Street Distillers will host a release party for this historic whiskey on Saturday, December 7 starting at noon with a limit of two bottles per person. Retailing at $99.99 per bottle, each whiskey is wax dipped and includes a specialty, hand-tied bead. Limited quantities will also be available at participating retailers early to mid-December, just in time for the holidays. 

“There is literally no precedent for a Bourbon of this background or character,” says LeMoine.
“We’re only emptying two single barrels this year so get it while you can!”

Laws Whiskey House Makes Waves with Release of 6-Year Bottled in Bond Four Grain Bourbon Whiskey on July 28

This whiskey was aged for six years, exceeding the minimum four-year standards of the Bottled in Bond Act of 1897

DENVER, CO— Laws Whiskey House is releasing a 6-Year Bottled in Bond Four Grain Bourbon expression of its award-winning Four Grain Bourbon. Bottles will be available at the distillery on July 28; participating Colorado retailers will receive bottles in August, while supplies last.

This whiskey was aged for six years, exceeding the minimum four-year standards of the Bottled in Bond Act of 1897. The 6-year bonded Four Grain Bourbon will replace Laws Whiskey’s 4-year version, which has been a popular staple in the Laws portfolio for several years.

“The 4-year bonded Four Grain Bourbon has been a personal favorite of mine, but with the release of the 6-year expression, we’re raising the bar and shifting the bonded Four Grain to an older profile,” says Al Laws, founder of Laws Whiskey House. “This version produces smoother vanilla and caramel notes and an enhanced black cherry flavor that you don’t get from the 4-year version.”

Featuring 100% Colorado-grown corn from The Whiskey Sisters in Burlington, and rye, wheat and barley from Colorado Malting Company in Alamosa, the 6-Year Bottled in Bond Four Grain Bourbon matured in 53-gallon charred oak barrels.

A Bottled in Bond designation requires that the whiskey be a product of a single season, using the grain of a single season, made by one distiller at a single distillery, and aged at least four years in a federal government-bonded warehouse. This whiskey is then cut and bottled at 100 proof (50% ABV). By making bonded whiskeys, Laws continues to uphold the highest integrity in the whiskey-making process.

The 6-Year Bottled in Bond Four Grain Bourbon Whiskey joins Laws Whiskey’s lineup of bonded products, including the newly released Bonded Centennial Straight Wheat Whiskey, bonded Secale Straight Rye Whiskey, bonded Two Grain Straight Bourbon and bonded Straight Corn Whiskey.

A 6-year bonded bourbon is a first for the Colorado whiskey maker

What: Laws Whiskey House, Denver’s award-winning grain-to-bottle whiskey distillery, will be releasing their 6-year Bottled in Bond Four Grain Bourbon. A 6-year bonded bourbon is a first for the storied whiskey maker; previously, Laws has offered a 4-year Bonded Four Grain Bourbon that at the time was Colorado’s first bonded whiskey. 

Bottled in Bond requires that the whiskey be a product of a single season, using the grain of a single season, made by one distiller at a single distillery, and aged at least four years in a federal government-bonded warehouse. This whiskey is then cut and bottled at 100 proof (50% ABV). These rules are even more stringent than the U.S. standards for “Straight Whiskey.”

To celebrate this momentous occasion, Laws Whiskey House will have a special release party in their tasting room featuring live music from the Denver Vintage Reggae Society, cocktail classes every half hour, and whiskey and chocolate pairings to boot. Limited edition merchandise will be available including free rocks glassware for the first 100 bottles of 6-Year Bottled in Bond Four Grain Bourbon sold.

Food will be available for purchase by Rolling Smoke BBQ who will have special offerings to pair with Laws Whiskey.

BUENA VISTA, CO— Today Deerhammer releases a spirit that represents one of Colorado’s most compelling craft brewery-distillery collaborations: Elevation Apis IV Quad Barrel Finished Bourbon.

It starts with a beer, like all good whiskey stories do. Apis IV is a Dark Belgian-Style Ale brewed in the Trappist tradition and is one of the oldest recipes at Deerhammer’s neighbor, Elevation Beer Company in Poncha Springs. With a touch of locally sourced honey from Beekeepers Honey Boutique in Salida, the name Apis is a nod to the hardworking genus of the honeybee that help make this beer possible. Boasting notes of plum, fig, and molasses, Apis IV has a medium to heavy mouthfeel and finishes with subtle floral hops.

Deerhammer used Elevation’s Apis IV barrels to finish a batch of its Bourbon, already aged for two years in charred new oak. This barrel quickly became the honey barrel (or the beloved barrel) at the distillery and was an obvious choice when selecting an exclusive spirit to be sold at Total Wine & More in Denver, Colorado.

“This is one batch of bourbon with a very interesting journey from grain to bottle,” says Deerhammer Owner and Head Distiller, Lenny Eckstein. “I’ve never known of another spirit go into a beer barrel with such complexity to contribute to the bourbon. It’s almost like a fortified wine cask finish— the fruit notes that mingle with the malt are unreal.”

Beginning today, Deerhammer’s Elevation Apis IV Quad Barrel Finished Bourbon is available at Total Wine & More. This very limited quantity is for sale while supplies last.

Deerhammer Awarded 2019 Good Food Award for Cultura Cask Finished American Single Malt Whiskey

2019 marks the ninth year of the Good Food Awards and the second consecutive year Deerhammer has been recognized as a winner.

BUENA VISTA, CO— Deerhammer Distilling is the proud recipient of the 2019 Good Food Award in the spirits category for their Progeny Series: Cultura Cask Finished American Single Malt Whiskey. The distillery was recognized with the honors at the organization’s annual awards ceremony at the San Francisco War Memorial & Performing Arts Center on Friday, January 11. This is the second win for Deerhammer Distilling at the Good Food Awards following a 2018 win for their American Single Malt Whiskey.

2019 marks the ninth year of the Good Food Awards and the second consecutive year Deerhammer has been recognized as a winner. This platform recognizes to tasty, authentic, and responsible food producers in 16 categories: beer, spirits, cider, charcuterie, cheese, chocolate, coffee, confections, fish, honey, oils, pantry, pickles, preserves, snacks and elixirs. This year’s competition saw 2035 entries.

Deerhammer’s Cultura Cask Finished American Single Malt was one of 401 finalists for the 2019 awards, which included 22 other finalists in the competition’s spirits category.

“It is a huge honor to take home the Good Food Award for a second time,” explains co-founder Lenny Eckstein. “It’s especially meaningful for us to be recognized this time around for such an unconventional whiskey. So much of the American whiskey landscape is absolutely dominated by the same old standard styles and flavors that have been around forever. We do things differently at Deerhammer, and the Progeny Series whiskey that won this year is a great example of exactly that. We took our 2 year American Single Malt and finished it for an additional year in barrels that we seasoned with Guatemalan cacao nibs from Cultura Craft Chocolate.”

Spirits that meet the criteria for Good Food Awards entry must be made in the United States utilizing ingredients grown and sourced responsibly without the use of synthetic herbicides, pesticides, fungicides or fertilizers as much as possible, free of artificial ingredients, and distilled without GMOs.

BUENA VISTA, CO — Deerhammer American Single Malt Whiskey was named a finalist in the spirits category of the 2018 Good Food Awards! 

In its eighth year, Good Food Awards are given to tasty, authentic and responsible food producers in 15 categories: spirits, beer, cider, charcuterie, cheese, chocolate, coffee, confections, preserved fish, honey, oils pantry, pickles, preserves, and elixirs. Deerhammer American Single Malt is one of 279 finalists for the 2018 awards, which include 15 other spirits category finalists and seven other finalists across categories originating from the state of Colorado. Finalists were chosen from a pool of 2,057 entries.

Spirits that meet the criteria for Good Food Awards entry can trace all of their ingredients, from base distillate to added ingredients, without the use of genetically modified crops and without artificial additives.

Beginning its life as porter-style malted barley whiskey, Deerhammer's American Single Malt is shaped by open-air fermentation and double distillation through direct-fire copper pot stills. It is aged in charred virgin white oak casks for at least two years in Buena Vista's high alpine climate that maximizes the flavor potential of the mash, due to dramatic temperature shifts that can range from 40-80° in a single day. The result is a complex whiskey with notes of sweet coffee, cacao, caramel and spices. 

The winners of the 2018 Good Food Awards will be announced on January 19, 2018.

This whiskey is now routed down the traditional road of fortified wine cask finishing. A selection of Deerhammer’s finest two year matured, American Single Malt Whiskey was selected and transferred to ex-port wine casks for an additional year of maturation time. Deerhammer Distilling Produces Record Numbers, Announces Progeny Series

BUENA VISTA, CO —  Last year, Deerhammer Distilling produced more handcrafted spirits than ever before and experienced record growth in sales, which are up by 262 percent statewide, among other milestones.

Here is Deerhammer Distilling’s 2016 Year In Review

In 2016, Deerhammer distilled 6,217 gallons of whiskey. The majority of this volume represents the distillery’s flagship product Single Malt Whiskey. Deerhammer only distributes its spirits in the state of Colorado.

Last year Deerhammer reinvigorated its package with new glass bottles that have a traditional whiskey shape with sleek curvature. The new label designs are cleaner and bolder, with incorporated visual elements that commemorate why Deerhammer crafts whiskey in Buena Vista— including compass points on each corner to highlight the distillery’s rugged mountain surroundings. Also included in the new design is a small illustration of nearby Mount Princeton, river waves, wind, and diamond trailhead markers. The new labels were designed by Tim Praetzel out of Austin, Texas.

Looking Ahead

Next month at the Colorado Brewers Guild’s Collaboration Fest, Locavore Beer Works and Aquanaut Brewing will serve a beer that was aged in Deerhammer Single Malt Whiskey barrels. Look for more details about this beer on Deerhammer’s Facebook page.
