PALISADE, CO— A Peach Street Distillers bourbon barrel-aged red wine made by Sauvage Spectrum, Devil’s Prey, and a rendition of Peach Street Distillers Colorado Straight Bourbon aged in Sauvage Spectrum's Red Wine soaked Oak Barrels, will be available Thursday September 15 to officially kick off Palisade Colorado’s annual Wine Fest weekend.
ABOUT THE WINE
Devil’s Prey is Sauvage Spectrum’s first foray into barrel-aged red wine. “We couldn't think of requesting the help from a better local partner,” says Winemaker and Co-Founder
Patric L. Matysiewski about his neighbors Peach Street Distillers. For Peach Street who are passionate about expressing the bounty of Colorado’s small farms in their final products, Sauvage Spectrum’s request was well-received.
To create Devil’s Prey, Matysiewski and his team took their most approachable red wine and aged it on Peach Street barrels for three and a half months. The experience begins with dark fruit jam and Bourbon aromas, followed by notes of dark cherries, tobacco, vanilla, brown sugar, and a hint of spice.
“This project is called Devil's Prey due to the fact the innocent wine lay victim to the spirit,” says Matysiewski. “Normally upon evaporation of wine or spirit you'd call that the "Devil's Cut", but here we take advantage of the Bourbon flavors from the previously used Peach Street barrels to help infuse some local flavor into this ever popular and growing style of wine. The flavors previously housed in the barrel actually seep back into the product as the wine starts to evaporate from the oak.”

Peach Street Spirits transferred their handcrafted three-year-old Colorado Straight Bourbon into a freshly emptied Devil's Prey-soaked Oak Barrel for an additional 6 months of aging to craft this novel spirit. This single barrel, number 753, was then packaged as a single barrel celebration of this season's Colorado Wine Fest and in collaboration with Sauvage Spectrum Devil's Prey release. The resulting bourbon boasts a rich mahogany hue that’s several shades darker than Peach Street Colorado Straight Bourbon’s traditional amber hue, with notes of dark cherry, vanilla and jam balanced by sharper edges of rye and spice, and a touch of sweet corn.

From Zia’s first days as a brand slinging burritos out of an airstream in Ska’s parking lot, 16 years of fast-casual service on North Main (now SAGE - Farm Fresh Eats), eight years in a second location on the South side of town, and now to Zia Cantina’s new location at 2977 North Main Avenue, the Ska and Zia friendship has only grown stronger with time, burritos, beers— and now spirits. This week Zia debuts a fresh cocktail menu featuring Peach Street Distillers spirits.
Some of the new cocktails include Goat Limeade made with Peach Street Goat Vodka, the Ska Mexican Logger Beer-Arita made with Peach Street Orange Liqueur and Ska Mexican Logger, and the La Mula Cabra available with the addition of Peach Street Brandy, or Modus Hoperandi Beer Schnapps.

BOULDER, CO— Ska Street Brewstillery, the first Colorado business of its kind, will celebrate one year in business all month long with a beer collaboration and livestream concert with Kyle Hollingsworth, a custom snowboard giveaway, an anniversary beer named 1:11 Imperial Stout, and refreshed menus.
Today, Wednesday March 3, Ska Street releases Fearless Composition IPA, a West Coast IPA single hopped with Citra, that was brewed with Kyle Hollingsworth for his birthday on March 2. The beer is available for purchase in Crowlers at Ska Street, where guests are encouraged to stock up on this limited release to watch the live stream of the sold out Kyle Hollingsworth Birthday Party feat. Ska Street Brewstillery opened on March 16 of 2020 just one hour and 11 minutes before Colorado’s first restaurant lockdown was instated. Accordingly, the brewstillery’s one year anniversary beer is called 1:11. This 18.5% Imperial Stout was barrel aged in Peach Street bourbon barrels. 1:11 will be available beginning on March 17 while supplies last.

BOULDER, CO— Ska Street Brewstillery, the first Colorado business of its kind, begins limited distribution today with the release of their first packaged products— Chasing Gremlins Barrel Aged Imperious Stout and Third Wave White Rum crafted by Brewstiller Damon Scott.
In the truest fashion of the Legion of Ska, Ska Street, a joint project of sister companies Ska Brewing and Peach Street Distillers, will hit the market in a big way— with a bold, 18.5% ABV beer and an inspired spirit that showcase Scott’s robust brewing and distilling background. Scott received his MSc degree in Brewing and Distilling from Heriot-Watt University, and worked as the Technical Brewing Projects manager of the Brewers Association with a decade of brewery production and management in between.
“This is the guy we put in place to execute everything we’ve learned in 40 collective years of experience in brewing and distilling,” says Ska Brewing CEO and Co-Founder Dave Thibodeau. “We’re proud to showcase his unique skill set and the facility we’ve built around him with the release of a new product from both sides of Ska Street.”
Chasing Gremlins Imperious Stout was aged at Ska Street in a Peach Street Colorado Straight Bourbon 5 Year Single Barrel, with added maraschino cherries and vanilla to “layer in flavors like you would a cocktail,” Scott explains. Chasing Gremlins connects the dots between the brewing and distilling side of what Ska Street does, Scott says. “At 37 proof, it’s almost a spirit in itself!”
Along with Chasing Gremlins comes Third Wave White Rum, distilled from 100% organic cane sugar. Tasting notes include tropical fruit, pineapple, and banana esters, with a hint of vanilla sweetness. Third Wave is Scott’s first contribution to the Peach Street family of spirits, which up until now has not included rum.
“Traditionally rum has a lot of mixed culture fermentation, which offers a chance for us to use our super traditional copper, alembic pot still,” Scott says. “We picked specific yeasts isolated from rum fermentations known to produce esters and more fruity flavors, and our still allowed us to retain as much of that character as possible.”
Third Wave Rum bottles and Chasing Gremlins Imperious Stout bombers will be available this week across Colorado. The beer and spirit will be self-distributed by Ska Street in Boulder and Palisade, and by Ska Distributing in Durango. BOULDER, CO— After having to close its doors just one hour and eleven minutes after statewide on-site dining was shuttered, Ska Street Brewstillery will reopen to the public Wednesday, May 6 to serve a new to-go menu.
The limited menu at Ska Street Brewstillery will include some of the new establishment’s signature sandwiches such as The Dave and the Breeze BLT, as well as a new Family Meal menu with serving size options from 2 to 10 people. Many of the menu items are vegetarian and vegan. There will also be Ska beers, Peach Street spirits, and cocktails to-go.
Ska Street Brewstillery will be open Wednesday through Friday from 3pm to 7pm, and Saturday from noon to 7pm. Orders must be placed online or over the phone to minimize onsite contact and exposure.
“This is truly unprecedented for us all— homeschooling our kids, cancelling family and friend gatherings, postponing our travel and exploration of not just Colorado but our wide and wonderful world,” says Ska Street’s General Manager Katie Nierling. “We hope there is a silver lining in this all— we are stronger together and because of one another.”

Peach Street Distillers Pear Brandy Named Best Brandy in the USA

PALISADE, CO— Peach Street Distillers was honored with a gold medal at the American Distilling Institute’s 2020 Judging Awards last week, and with gold earlier this month at the American Craft Spirits Association Awards for best brandy in the United States.
Peach Street’s Pear Brandy is crafted from a 100 percent pear base, with pears grown a matter of blocks from the distillery in downtown Palisade, Colorado. The pears are pressed, fermented, and distilled onsite before they age in French oak barrels for a minimum of 2 years.
Peach Street Distillers has now received 31 ADI medals in total. The distillery was proud to take home five medals for its five entries this year— a gold medal for Pear Brandy; as well as silver medals for American Whiskey, Colorado Straight Bourbon, and Smoked Rye Whiskey; and a bronze for Amaro.
The American Distilling Institute accepts entries in all classes and categories of craft spirits from small, independently owned distillers, blenders, bitters makers, and producers of aperitif and fortified wines. Each year, both United States and international entries are tasted blind and evaluated by expert panels of judges made up of distillers, journalists, bar owners, bartenders, retailers, wholesalers, distributors and importers. The Ska Street Brewstillery menu will include vegetarian and vegan options, as well as the farm-to-table ethos championed by Peach Street and executed by recently hired Head Chef Travis Messervey. The taproom will pour all of Ska’s flagship beers — including Modus Hoperandi IPA, True Blonde Ale, Pinstripe Red, and Pink Vapor Stew— as well as experimental one-offs and other specialties brewed on-site, along with whiskey, gin, vodka, and other spirits also made at the facility.

Co-founded in 2019 by Ska Brewing co-owner Matt Vincent and the owners of Durango Organics, Oh Hi Beverages is a Durango-based cannabis drinks company that crafts THC and CBD seltzers. Ska Distributors will distribute Oh Hi’s CBD seltzer line, which includes Pomegranate, Ginger Basil Limeade, Lemon Lime, and Grapefruit flavors. The cans are available as 12 oz. 4-packs. “We are really excited to partner with Ska Distributors to bring our CBD line of beverages to Southwest Colorado,” says Vincent, who also founded Ska Fabricating in 2012. “It's a great relationship that shares the synergy of all the families it represents. Ska Street Brewstillery Adds to Cast of Characters With New Hires; Job Fair on February 3
Damon Scott hired as Head Brewstiller and Katie Nierling hired as General Manager of Ska Street Brewstillery in Boulder, slated to open in March.
DURANGO, CO— Ska Brewing and Peach Street Distillers have hired Damon Scott as Head Brewstiller and Katie Nierling as General Manager of the Ska Street Brewstillery, slated to open in March. Ska Street is also hosting open interviews on February 3.
As Head Brewstiller for Ska Street Brewstillery, Scott will brew and distill pilot batches and new products in collaboration with Ska Brewing Company and Peach Street Distillers. Previously, as technical brewing projects manager for the Brewers Association, he worked with industry leaders to develop resources for craft brewers. In 2010, Damon attended Heriot-Watt University and received an MSc degree in Brewing and Distilling. He has brewed at and managed brewing operations in Colorado and Washington breweries over the last decade.
“Having worked in Durango as a brewer for years, Ska was always at the center of my craft beer universe,” Scott says. “When I heard about the collaborative concept they were planning with Peach Street in Boulder, I jumped at the chance to finally work with these pioneering misfits! I'm stoked to help bring some new beers and spirits to the mix of outstanding liquids we'll have from our two motherships.”
As General Manager for Ska Street Brewstillery, Katie Nierling will manage front-of-house operations at the new restaurant and 30 tap brewstillery bar. Nierling comes from Parry’s Pizza and the former Breckenridge-Wynkoop group where she worked at Ale House at Amato’s.
“I believe strongly in the mindset to grow your business with drive and innovation— and that is exactly what we are doing at Ska Street,” Nierling says. “We’re bridging the Western Slope gap to the Front Range. Peach Street Distillers to Release Colorado’s First 10-Year Bourbon
The Palisade-based small batch distillery is proud to add Colorado Straight Bourbon 10 Year Single Barrel in their stellar whiskey program.
PALISADE, CO— Peach Street Distillers is making Colorado history. For the first time ever, the state’s oldest independently owned distillery will release Colorado Straight Bourbon 10 Year Single Barrel, a bourbon that has been quietly resting in a dark corner in Peach Street’s rickhouse since October 2009. Notably, this magic was occurring during a time when distilling was much less popular of an endeavor in the Centennial state.
“Traditionally, longer aged Bourbon Whiskeys are from Kentucky where the humidity and daily shifts in temperature are not so extreme,” says Dustin LeMoine, Bourbon Lobbyist and Director of Sales at Peach Street Distillers. “Our little rickhouse in the Colorado desert sees very dry conditions and temperature swings of up to 40+ degrees per day. This combination draws the bourbon deep into the oak and keeps the spirit in the barrel active—further developing the flavor.”
Peach Street’s Colorado Straight Bourbon is made from sweet Western Colorado corn grown two miles down the road, pure Rocky Mountain water, and rye and barley from Proximity Malt in the San Luis Valley, our 10 Year Expression was aged in American Oak for ten years and bottled from a single barrel. “The result is a bouquet of flavors including cherry, cinnamon, hay, pipe tobacco, caramel and a heavy dose of leather and vanilla on the nose”, according to Head Distiller, Davy Lindig. Peach Street Distillers is proudly local which is why all phases of production— brewing, fermenting, distilling and aging— were done in Palisade, Colorado.
The 10-Year Colorado Straight Bourbon will join Peach Street’s award-winning lineup of Bourbon and Whiskey expressions including Colorado Straight Bourbon, 5 Year Single Barrel Colorado Straight Bourbon, Barrel Strength Colorado Straight Bourbon, Modus Hoperandi Hop Whiskey, American Peated Single Malt Whiskey and Smoked Rye Whiskey.
Peach Street Distillers will host a release party for this historic whiskey on Saturday, December 7 starting at noon with a limit of two bottles per person. Retailing at $99.99 per bottle, each whiskey is wax dipped and includes a specialty, hand-tied bead. Limited quantities will also be available at participating retailers early to mid-December, just in time for the holidays.
“There is literally no precedent for a Bourbon of this background or character,” says LeMoine.
“We’re only emptying two single barrels this year so get it while you can!”

BOULDER, CO— The Legion of Ska continues to grow with Ska Street, Boulder’s first “brewstillery” concept. This joint venture by Ska Brewing and Peach Street Distillers is slated to open in the former FATE Brewing space in spring of 2020.
Peach Street Distillers was hatched in 2005 when Ska Brewing’s two co-founders Bill Graham and Dave Thibodeau found the allure of Palisade’s locally grown fruit too much to pass by. Since Peach Street’s opening, the two companies have worked side by side— with a shared sales team, and collaborations such as Modus Whiskey, and the Boomerang Barrel Program.
Backing up even further, Ska Brewing was born on Colorado’s Front Range out of the minds of Graham and Thibodeau, with the influence of Boulder’s burgeoning beer community. This area is where they grew up and learned to homebrew, where Graham attended the University of Colorado, and where many of Ska and Peach Street’s staff got their start in the brewing industry.
After 15 years of partnerships, Ska and Peach Street will finally set up shop under the same roof in spring of 2020. “A number of serendipitous factors have come together to make Boulder the answer to what we’ve been trying to do for a decade,” says Thibodeau. “when the opportunity presented itself, we jumped at this chance to call Boulder home.”
Steve Breezley, Ska’s Chief Operating Officer who formerly worked at Avery Brewing, says, “So many of us at Ska feel attached to the Boulder community— it’s active like our home in Durango, and it’s an epicenter for craft beer.”

Ska Street will integrate Ska and Peach Street’s businesses, with onsite brewing of Ska beers in a 10 barrel brewhouse and distillation of Peach Street spirits in a 450 liter still. The Brewstillery will offer 30 Ska beers on tap and a mixology program that replicates the Palisade distillery experience. Ska Street’s food menu will bring together components of each business, with music-inspired, Caribbean-influenced eats to mirror the food served at Ska’s World Headquarters in Durango, and the thoughtfully sourced farm-to-table approach that guests have come to love at Peach Street.
Ska’s experimental brewery, the Mod Project, has afforded the brewery and many of its retailers the opportunity to do some unique projects together in Durango, and at Ska Street in Boulder they plan to build upon this platform with their spirits, as well as well as their beers.
“We’re excited to get back to the Front Range, and to get more involved in Boulder,” Thibodeau says. “Beyond the new location, this is a great opportunity to pursue collaborations with accounts in the area that have been selling our beer for years.”

Ska Brewing and Peach Street Distillers Launch Boomerang Barrel Program
The first of Ska Brewing and Peach Street Distillers’ Boomerang series beers, BarrelAged Imperial Stout Barrel No. 394, is now available at Animas Wine & Spirits.
DURANGO, CO— The first of Ska Brewing and Peach Street Distillers’ Boomerang series beers, Barrel-Aged Imperial Stout Barrel No. 394, is now available at Animas Wine & Spirits. The beer, a 17% ABV Imperial Stout, was aged in a Peach Street Distillers whiskey barrel hand selected by the owners of Animas Wine & Spirits as part of the brewery and distillery’s new small-batch program.
The new Boomerang series is one more way for sister companies Ska Brewing and Peach Street Distillers to collaborate with one another. Within this series the companies plan to invite key accounts to choose their own barrels at Peach Street for which specialty beers will age, to be served exclusively for sale at each respective business. “This is a great opportunity to do something unique in the craft world, where people from both productions teams can collaborate on styles and flavors to match the barrel character to the beer they will be filled with,” says Peach Street Director of Sales Dustin LeMoine. “Buyers at exceptional liquor stores know their customers better than anyone, and with their input we can put together a program that combines craft interests from all over the palate, keeps things Colorado local from grain to glass (and shelf), and tastes pretty damn amazing… Why wouldn't we?”
The first of the Boomerang Series beers is Barrel-Aged Imperial Stout Barrel No. 394, a 17% ABV Imperial Stout. This is the highest ABV beer that Ska Brewing has brewed in almost 24 years of business.
Currently in the works for the Boomerang program are a prickly pear sour ale in Peach Street Anjeo-aged Dagave Gold barrels, several twists on giant imperial stouts in various Whiskey barrels, an Imperial Maple Brown. “This is just the beginning,” LeMoine adds. “Ska Brewing and Peach Street Distillers are focused on elevating the game of barrel aging in Colorado.”

“Bier Schnapps crafted in the German tradition is simply beer that has been distilled to varying degrees of alcohol content,” says Peach Street Distillers Co-Founder Bill Graham.
“Some of the distilling old-timers might say that your whisky will only be as good as the beer you’ve made in the first place,” says Davy Lindig Head Distiller. “With that in mind, the Peach Street Distillers team and the Ska Brewing team paired up to brew and then distill Ska Modus Hoperandi Bier Schnapps. Take all the sweet, hoppy goodness you love about and IPA and make it a schnapps. And when we say ‘schnapps’ we ain’t talking candy canes and thin mints— this is whiskey. When we’re fortunate enough to inherit beers from some of the best breweries in the world, we finish it in our still and age it in our bourbon barrels and— well shoot, you know it’s good.”
Kurt Randall, Ska Brewing’s Head Brewer, directed the brewing side of this Beer Schnapps operation, while Lindig oversaw fermentation and distilling. “I kept having to remind myself that we won’t be drinking this beer,” said Randall during the brew. “Actually we’ll be drinking the schnapps, like— in a year.”
Ska Brewing and Peach Street Distillers have long been sister companies, but this collaboration of brewers and distillers co-opting a final bottled spirit is a first. “We brewed Modus Hoperandi IPA pretty much top to bottom”, chuckles Randall, “This is Modus, in its most concentrated form.”
Modus Hoperandi Bier Schnapps is now available throughout Colorado distributed by Breakthru Beverage, and at the Peach Street Distillers tasting room in Palisade Colorado.

Peach Street Distillers Wins Three 2018 American Distilling Institute Judging Awards
Peach Street Distillers was honored with three awards from the American Distilling Institute’s 2018 Judging Awards, bringing its total count of ADI awards to 22.
PALISADE, CO— Peach Street Distillers was honored with three awards from the American Distilling Institute’s 2018 Judging Awards yesterday, bringing its total count of ADI awards to 22.
Peach Street’s Pear Brandy received a Silver Medal in the ADI Fruit Brandy Category. The distillery's Oak Aged Pear Brandy is made from 100 percent pears grown a matter of blocks from the distillery Itself. The pears are crushed, pressed, and fermented onsite before they age two years in French oak barrels.
Colorado Straight Bourbon received a Bronze Medal in the Straight Bourbon Category. This Bourbon is made with 60 percent Palisade corn that is grown, harvested, and milled a mere 3.5 miles from the distillery’s front door. It is mashed and fermented onsite and aged in new American Oak barrels for 2 to 3 years.
Amaro, the newest offering from Peach Street, won a bronze medal in the ADI Amaro Category. Amaro’s base spirit is a locally made Limberger Varietal Wine distilled onsite and proofed to 90 proof with 29 botanicals macerated to make a beautifully assembled Digestif.
“We do all of these crushes, mashes and ferments onsite – and kind of the hard way, at that,” says Peach Street Head Distiller Davy Lindig, “So it’s really cool to be recognized for your hard work. The crew is stoked! I’m stoked for certain!”
Peach Street Distillers has now been awarded 22 ADI medals in total— nine gold medals, six silver and seven bronze. The American Distilling Institute accepts entries in all classes and categories of craft spirits from small, independently owned distillers, blenders, bitters makers, and producers of aperitif and fortified wines.
